Homemade Vegetable Soup Recipe
A delicious and nutritious recipe for vegetable that will warm you from head to toe.

Yield: 6 servings
Ingredients:
- 2 tbs. olive oil
- 2 sliced carrots
- 2 cloves diced garlic
- 1 large diced onion
- 1 cup green beans
- 3 potatoes (peeled and cubed)
- 1 quart vegetable broth
- 1 can pureed tomatoes
- ¼ chopped parsley
- 1 cup corn kernels
- 8 button mushrooms
- 1 cup spinach
- Grated parmesan cheese (optional)
- Salt and pepper to taste
Instructions:
In a large pot, sauté the onion and the garlic in the olive oil on medium to high heat. Once the onion and garlic turn a light brown color, bring down to medium heat and add the broth, carrots, potatoes, green beans, and mushrooms. Let simmer for 20 minutes. Add the tomatoes, corn, spinach and salt and pepper and let simmer for another 15 minutes and then add parsley and simmer for another 15 minutes. Serve in bowls and add parmesan cheese to garnish.
