Homemade Vegetable Beef Soup Recipe
For this vegetable soup recipe, we add beef for some extra flavor for those meat-eaters out there.

Yield: 8 to 12 servings
Ingredients:
- 1 pound stew beef, cut into slices
- 4 tbs. olive oil
- 1 chopped onion
- 3 minced garlic cloves
- 3 large carrots (chopped)
- 1 quart beef broth
- 3 potatoes (peeled and cubed)
- 1 can stewed tomatoes
- 2 cups cut green beans
- 1 cup peas
- ½ teaspoon dried marjoram
- ½ teaspoon thyme
- Salt and pepper to taste
Instructions:
In a pan, sauté beef until it is browned and cooked and set aside. In a separate large pot, sauté garlic and onion until they are golden brown. Add broth, potatoes, carrots, tomatoes, green beans, and peas and let simmer at medium heat for 20 minutes. Add the beef and the spices and let simmer on low heat for 1 and a half hours.
