Homemade Vegetable Soup Recipe
A delicious and nutritious recipe for vegetable that will warm you from head to toe.
Prep Time: 20 minutes
Cook time: 50 minutes
Yield: 6 servings
Ingredients:
- 2 tbs. olive oil
- 2 sliced carrots
- 2 cloves diced garlic
- 1 large diced onion
- 1 cup green beans
- 3 potatoes (peeled and cubed)
- 1 quart vegetable broth
- 1 can pureed tomatoes
- ¼ chopped parsley
- 1 cup corn kernels
- 8 button mushrooms
- 1 cup spinach
- Grated parmesan cheese (optional)
- Salt and pepper to taste
Instructions:
In a large pot, sauté the onion and the garlic in the olive oil on medium to high heat. Once the onion and garlic turn a light brown color, bring down to medium heat and add the broth, carrots, potatoes, green beans, and mushrooms. Let simmer for 20 minutes. Add the tomatoes, corn, spinach and salt and pepper and let simmer for another 15 minutes and then add parsley and simmer for another 15 minutes. Serve in bowls and add parmesan cheese to garnish.

Homemade Vegetable Beef Soup Recipe
For this vegetable soup recipe, we add beef for some extra flavor for those meat-eaters out there.
Prep Time: 30 minutes
Cook time: 2 hours
Yield: 8 to 12 servings
Ingredients:
- 1 pound stew beef, cut into slices
- 4 tbs. olive oil
- 1 chopped onion
- 3 minced garlic cloves
- 3 large carrots (chopped)
- 1 quart beef broth
- 3 potatoes (peeled and cubed)
- 1 can stewed tomatoes
- 2 cups cut green beans
- 1 cup peas
- ½ teaspoon dried marjoram
- ½ teaspoon thyme
- Salt and pepper to taste
Instructions:
In a pan, sauté beef until it is browned and cooked and set aside. In a separate large pot, sauté garlic and onion until they are golden brown. Add broth, potatoes, carrots, tomatoes, green beans, and peas and let simmer at medium heat for 20 minutes. Add the beef and the spices and let simmer on low heat for 1 and a half hours.

Homemade Chicken Vegetable Soup Recipe
Nobody can resist the taste of chicken soup, especially when it is homemade and chock-full of delicious vegetables and spices.
Prep Time: 20 minutes
Cook time: 40 minutes
Yield: 4 to 6 servings
Ingredients:
- 1 can chicken broth
- 2 tbs. olive oil
- 1 cup carrots (chopped)
- 4 potatoes (cubed and peeled)
- 1 cup chopped onion
- 1 can tomato juice
- ½ pound cubed chicken
- 2 pieces of celery, cut into small pieces
- Salt and pepper to taste
- 1 tbs. Italian seasoning
Instructions:
In a large pot, cook the chicken in the olive oil until it is thoroughly cooked and browned. Add the broth, tomato juice, potatoes, onion, carrots, and celery and let simmer for 20 minutes. Add the Italian seasoning and salt and pepper and let simmer for an additional 20 minutes.
